Medium or semisoft cheeses are probably the most common group of ripened cheeses, usually having a ripening period of 30–90 days, after which their water content is in the range of 39–50%.
Semisoft cheese list includes such varieties as Roquefort, mozzarella, Stilton, manchego, Gorgonzola, provolone, Gouda, Edam, São Jorge cheese, and many others.
