Crotonese comes from Calabria in southern Italy. This Calabrian cheese is named after the city and province of Crotone, where it is produced mainly between the months of January and June when sheep's milk is of the best quality and most abundant. Pecorino Crotonese is aged in wicker baskets which leave quite distinctive hatch marks on its rind. Depending on the length of maturation, Crotonese comes in three varieties: Fresco, Semiduro, and Stagionato.
