Thunder Oak Smoked Gouda expresses appealing, complex flavours, and maintains an unusually rich texture. Young cheeses are fruity, tangy and silky smooth, while older wheels become spicy, caramel sweet and toasty, with a crystalline texture.
Unlike other Pecorinos, this one is not aged. Pecorino Toscano is a young 100% sheep’s milk cheese, only about 40 days old when it arrives. Because it is a young cheese, it is somewhat discreet and very mild. As the cheese first hits your tongue, you detect a hint of Tuscan herbs, grass and wildflowers.
Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike most blues, is not too salty. There is nice balance between the creamy, salty, peppery and sweet flavors. Mild enough for the novice blue cheese eater, flavourful enough for a die-hard blue advocate.
Caerphilly is an original Welsh cheese that is quite similar to English Wensleydale and Lancashire. Caerphilly differentiates itself by having a higher moisture content than these other two, giving it a more buttery, less crumbly personality. A young, white, fresh-tasting cheese, Caerphilly has a pleasant, creamy flavor that goes well with a crisp Chardonnay.
