Teleggio – Monforte

Teleggio is a Cheese Hand Washed in Italian Heritage.

Teleggio by Monforte is a smear-ripened and washed rind cheese.  It is named after the alpine valley of Val Taleggio in Italy.

This cheese has a strong aroma and has a mild flavour with a fruity tang and thin crust. The milk is acidified and brought to the lab from milk calves. The cheese is set on wood shelves in a chamber and sometimes kept in caves to preserve  tradition and will mature between six to ten weeks.

The cheese can be eaten as is with crackers, grated in salads or mixed with spices and tomatoes on bruschetta. It melts well, and can be used in risotto.
