Mimolette is a semi-hard cheese that has the same texture and spherical shape as Dutch Edam, but with a black wax rind. It has a bright orange-colored interior and because of its hue, it is sometimes called the “Halloween Cheese.” Its’ taste is gloriously sweet, but at the same time, uncommonly tame for a French cheese. Absolutely the best pick for your cheese plate at the Jazz or Blues Festivals.
