Le Sien d’Helene

Le Sien d’Helene is made with milk aged for 2 to 4 months from Jersey cows and dairy sheep from farms in the mountains of Ste-Hélène-de-Chester, Quebec.  A creamy rich cheese, flavoured with ewe’s milk lends a mild acidic taste.  The shape of the cheese represents the hills of the village.  It’s name is a unique blend of the words Ste-Helene (Saint Helen) and Sien d’Helene (Helen’s breast, in French).  A wonderful cheese which is even more delicious when paired with walnuts and cranberries.
