Garlicky Gruyere Dip

We are almost famous for this one!

1 pound cave aged gruyere cheese (asiago or swiss can be substituted)

1 bunch green onions, thinly sliced on the diagonal

2 tsp. garlic powder or 1 large clove of fresh garlic

freshly ground pepper

Hellman’s Real Mayonnaise

Coarsely shred cheese and add green onions, garlic and pepper.  Gently toss together to blend.  Add enough mayo to lightly bind the mixture, start with two tablespoons, maybe a third.

Put this in a pretty dish in the middle of a cheese board and stand back!  Serve with 34 degree crackers or crusty french bread.

8 year old cheddar / Bleu Benedictin / La Sauvagine / Douanier
