This is a hand crafted washed rind cow’s milk cheese that combines traits from Gouda and another Swiss variety called Appenzeller. It is 8 months old, delicately aged on cedar wood planks adding robust flavors to the cheese. It has creamy and rich flavors with sweeter overtones and distinctive eyes throughout the body of the cheese. It pairs well with white wines such as Chardonnay and Sauvignon Blanc and also Pilsner beers.
Eugene and I tried it for the first time on a cheese plate at Epic Restaurant in the Royal York Hotel, delish!
